Hi there - I'm afraid to say I made this umeshu in Japan - so I just purchased the plums - a specific Japanese plum (prunus mume - actually more closely related to the apricot) with distinct flavour from a local market. I think you could experiment with most full fragrance/flavoured plums but they need to be the firm green ones so ask your local greengrocer to get order them in before they are ripe. You might have some luck at Queen Victoria markets or go direct to a plum grower. Or try a Japanese market /grocery store in central Melbourne - they might order them in for their Japanese customers to make plum wine with so are a good bet. Sorry I can't be of more help!
Hi Angela, I assume you have tried a large Japanese grocery store? or Chinatown - they usually have rock sugar there. If there is a big Japanese store like Daiso near you there's a small chance too. If you are in NSW try TOKYO MART or ANEGAWA TRADING and tell them you want the sugar for making UMESHU. If all else fails I guess you could try with another form of sugar that comes in large chunks like palm sugar? Hope that helps . J
